
Methi Baingan ki Subzi | Ringla Methi Nu Shaak | Fenugreek Leaves with Eggplant Curry
Ingredients
- Brinjals / Egg Plant - Medium Shaped 3-4 Lightly Chopped
- Chooped Methi Leaves - 1 Bowl
- Turmeric - 1 tsp
- Jeera - Cumin Seeds - 1 tsp
- Coriander powder - 1 tbsp
- Green Chillies Paste - 2 tsp - can adjust as per taste
- Salt - As Per Taste
- Sugar - 1 tsp - Optional
- Garam Masala - 1 tsp
- Hing - 1 tsp
- Oil - 1 tbsp
Instructions
- In a cooking pan add some oil
- As oil starts heating, add hing and jeera
- Add Chopped Brinjals and statue for 2 minutes
- Add Salt and 2-3 tbsp of water
- Cover the vessel with thali/plate and add some water on thali and let it cook for 4-5 minutes (please check video for details)
- Add chopped methi leaves, Coriander powder, turmeric, green chili paste, sugar & garam masala
- Mix all the ingredients well and let it cook for about 3 minutes, cover the vessel while cooking
- Now Subzi is ready to be served, tastes delicious with hot rotis, pulka rotis, parathas and even rice
