- Carefully cut the hard stems of patra leaves (please watch the video given below for the details)
- In a mixing bow - add besan, rice flour, green chili paste, coriander powder, red chili powder, turmeric, garam masala, hing, tamarind pulp, jaggery & salt & mix everything well
- Add water as required and make it like a paste consistency
- Now take one patra leave, flip over & apply this paste over the patra leave, put another patra leave and apply the paste - you can make 3 layers or even 2 as required thickness of the rolls
- Steam these rolls for about 20-25 minutes
- Once properly steamed, let it completely cool down at room temperature
- Now carefully cut the rolls into rounds and shallow fry these rolls / you can also deep fry them
- For shallow frying - heat 2 tbsp of oil in cooking pan, as oil starts heating add mustard seeds (rai), while til (seasame seeds), hing & saute for a min
- Carefully add the patra rolls prepared and properly toss from both sides and then switch off the gas
- Take patra rolls in a serving plate and garnish with grated coconut
