
Cabbage and Carrot Sambharo | Gujarati Style Vegetables Stir Fry
Ingredients
- Shredded Cabbage - 1 Bowl
- Chopped Carrots - 1 Medium Sized Carrot
- Chopped Cucumber - 1 Medium Sized cucumber
- Chopped Bhavnagari Chillies - 2 tbsp
- Pomegranate - 2 tbsp
- Oil - 1 tsp
- Dariya Dal / Roasted Chana Dal - 1 tbsp - Powdered
- Salt - As per taste
- Sugar - 2 tsp - can adjust as per taste
- Green Chillies Paste - 2 tsp - can adjust as per taste
- Lemon Juice - 1 tsp
- Hing - 1 tsp
- Mustard Seeds / Rai - 1 tsp
- Chopped Coriander - Optional - to Garnish
Instructions
- In a mixing bowl, add Shredded Cabbage, sprinkle some salt and mix well, now let it rest for 5-7 minutes and keep aside
- In a cooking flame, heat oil and add mustard seeds(rai), as they splutter add hing, now add chopped carrots and statue it for a 2 minutes
- Add Chopped Cucumber, Chopped Bhavnagari chilies and mix well and statue it for about 1-2 minutes
- Add Green Chilies paste, and salt mix well and switch off the gas
- Take the bowl of Shredded Cabbage with salt and squeeze out the access water and collect the cabbage in another bowl
- Switch on the gas and add Shredded Cabbage (where the water was squeezed out)
- Mix every thing well and statue it for 2 minutes
- Switch of the gas and transfer stir fried vegetables to another bowl and let it cool completely to room temperature
- Add powdered sugar, pomegranate and powdered dariya dal and mix well
- Gujarati style sambaro is ready to be served
